General Note
Thompson first began smoking turkey in 1972 while stationed in Texas in the US Army. He was born in Delray Beach from Bahamian parents. For smoking he uses Australian pine and oak. He can smoke 10 to 20 turkeys at a time with special racks he made. He also smoked fish for the Delray Fish Market.
